This seasonal sauce is made by the freshest chilis straight from Hatch Valley, NM. We roast a portion of these chilis and add to the sauce after fermentation to achieve that smoky charred taste. You can actually see the black specks in the sauce! We add some tomatillos, along with a very small number of jalapeños, to enhance the sauce but keep that roasted hatch chili flavor throughout. This sauce is only seasonal so grab it when it’s available!
